Simpson recently met with Bedroom Pillow Talk's Carolina Chipotle at a Giggling Guacamole Restaurant in Redondo Beach.
She expressed the fact that she probably has one of the longest engagements in the history of engagements.

Jessica confessed to Miss Chipotle that she is seriously considering going down to Lake Charles, Louisiana and meeting with the world-famous voodoo woman, Madam Lottie Jo Lafayette.
She has heard nothing but good things about Madam Lafayette and she hopes that the Louisiana native can cast a spell on her fiancé Eric Johnson that will get his hesitating butt to the alter.
SIDENOTE: Simpson has said that money is no object and she has told one of her BFF's that if she is not Mrs. Eric Johnson by Valentine's Day then she will toss Eric to the curb and find someone else who will marry her.
