Secret of success = melt it in pot over boiling water - that way you only burn yourself Ellie

For what it's worth I made a chocolate and cookie base that way for a Key Lime pie during the hols. It was great!

Lynton- Sad thing is...I always use a double boiler. I once even went into this chocolate factory where I live and asked them what I did wrong, and they kind of laughed at me and said, "Chocolate is tricky." I've always wanted to learn how to make chocolate though. Of course, I've also always wanted to be a pastry chef, and chop veggies like a pro.
