Comfort food for January

The Saturday Night Menu

Boeuf Bourguignon

Ikg casserole beef, chopped into bits
I large red onion diced
6 shallots halved
6 cloves of garlic crushed
handful dried porcini
bouquet garni
1 birdseye chilli deseeded and chopped
salt and pepper
1 bottle Nuits St George or other red wine by preference
1 bottle Romanee Conti to wash it all down

Brown chopped beef with red onion and garlic using your preferred oil in large shallow frying pan

Transfer to flame proof casserole dish

Deglaze frying pan with glug of red wine, add to meat

Add halved shallots, dried porcini, herbs, chilli, salt and pepper

Add remaining wine, cover dish and put in lower part of oven at gas mark 2

Allow to cook slowly for two to two and a half hours

Serve with chive mash + parmesan, cream and truffle oil (if any) and your best red Burgundy


Feeds two extremely hungry people of four normal eaters

Roulade of Beef with Broad Noodles, Red Cabbage & German Rhine Wine

Appropriate amount of thin sliced Steak

Steaks should be about 2" wide and approximately 4-5" Long

Pound steaks to flatten wafer thin

Fill Steaks with combination of Dijon mustard, sliced onions, diced dill pickles and diced thick bacon

Roll Steaks, secure with twine in 2 places.

Brown in skillet using olive oil (Virgin Or Experienced)

Transfer to slow cooker.

Add 5 cans consommé or beef bouillon

Set on high, cook for 4-5 hours.

At end of cooking cycle, mix appropriate amount of Red Wine (Merlot comes to mind) with flour to make a roue, slowly stir into crock pot to thicken gravy until desired consistency.

Cook broad noodles 8 minutes in boiling salted water.

Serve Roulades with cooked noodles, red cabbage and ample goblets of White German Wine........

If still hungry, finish off with desert of Black Forest Cake
Black Coffee
Snifter of Asbach Brandy & appropriate cigar

Winter Blues Buster:

Read as many stories as you can - written by other writers here, especially the new ones.

Wash down with extra strong 8% or 10% beer until you can't focus anymore....then head for bed, if you can find it!

If not, sleep on the floor!
