BEIJING: The international community seems to be so taken in with a 'powerful and rising' China. But much of what is really happening in China remains opaque - hidden from the world. China presents its facade and the global community is expected to applaud.

From toxic lead toys; melamine-loaded milk; plastic-filler dog food and other such 'exotic delicacies' China now introduces a revolutionary cooking medium. Called "gutter oil"- this foul slop is fished up from sewage drains or collected at restaurant back doors and then sold to the nation's eateries.

The recycled oil is China's latest food-safety scandal so if you're planning a culinary cruise of China's restaurants - BEWARE - that unusual tasting sauce; that ancient Chinese secret; that je ne sais quoi; that soupcon of qu'est-ce-que-c'est you experience is - well - downright SCARY!

Every night barrels of food waste and oil are carted out of big restaurants and hotels in Beijing in filthy metal barrels. Peddlars pick up this waste, filter the slop for pigs then re-sell the oil for use in restaurants.

Number 36 with pork; number 52 with bok choy, heavenly fried rice...the list is endless. Stir-fry anybody?
